Hatay's Mortadella Registered as Protected Culinary Heritage

Hatay’s French-Era Mortadella Officially Registered as Protected Culinary Heritage

CDF celebrates the recognition of Hatay’s mortadella, a culinary expression of European influences adapted through Antakya’s local traditions. The dish has been granted Geographical Indication status by the Turkish Patent and Trademark Office, becoming the region’s 75th officially protected culinary product.

It took shape in the early 20th century, when a meat-processing technique introduced during the French presence in the region was reworked into something distinctly local: minced veal and tail fat with pistachios, cumin, and garlic, seared and simmered in a vinegar-tomato broth. It bears little resemblance to the cured Italian sausage sharing its name; in parts of the region it’s known instead as “et rulosu” (meat roll), a clear example of how encounters between cultures can be reshaped into something rooted in local identity.

Its survival owes much to local leadership: since Hatay joined #UNESCO’s Creative Cities Network for #Gastronomy in 2017, the municipal Gastronomy House has worked to document and revive dishes at risk of disappearing, mortadella among them. A small but telling reminder that #heritage isn’t just inherited, it’s actively protected.
